Basic chocolate techniques (2 days)


Starting with chocolate is usually the biggest challenge for professionals. Therefor we would like to give among the courses of the Csokoládé Akadémia special attention for teaching the basic chocolate techniques for our students. This class gives the opportunity for professionals to learn the fundamentals of chocolate processing on a both theoretical and practical scale. During the course students will learn about the growing of cocoa, manufacture of chocolate from the cocoa bean to end chocolate products. Different methods of pre-crystallizing (tempering) chocolate, making pralines, chocolate bars and hollow figures are included in the course-programme.
